這是週六、日 藍帶開設的美食課，分成示範課和實做課各別三小時，一天的課程費用約台幣五千多元。

七月七日週六 是我第一次擔任一日美食課的助手，前幾天看到菜單，就覺得~~哇咧！！做這些菜給朋友吃，未免對朋友太好了 哈哈
這些好菜端上桌，友誼增添一倍，吃過之後，朋友也會平白多出一倍半，花費這筆錢是值得的。

我是助手 所有的事先準備工作 我在九點以前完成
中午吃飯時間 我也沒空
將示範完畢後的東西送到廚房
又忙著準備好 等來賓作菜

上課的年齡有三層老中青三代 各行各業

大多是非職業 旅遊到巴黎 上上廚藝名校
增添樂趣居多

這位笑的開心的媽媽 她女兒正在藍帶求學
看吧 喜歡做菜的朋友不會老 而且越來越漂亮
因為朋友太多 所以要親自下廚請客

小龍蝦沙拉
牛排搭奶油朝鮮薊
搭配葡萄柚(謝布利)白葡萄酒冰沙

Langoustine tartare with virgin olive oil
A fan of beef served on a bed of articjoke cream Chabils sauce and cocotte potatoes
Jubilee cherries sautems wine and grapefruit sorbet

前菜
Langoustine tartare with virgin olive oil
20 very fresh langoustine tails shelled
Loive oil
Lime juice
Salt pepper

50ML extra virgin olive oil
50ML balsamic vinegar reduced to a syrup

Herb salad
100 g young spinsch or beetroot leaves
1/2bunch chervil
1/2 bunch chives
1/2 bunch flat-leaf parsley
Juice of 1 1/2 lemons
Olive oil salt pepper

主菜 A fan of beef served on a bed of articjoke cream Chabils sauce and cocotte potatoes
4×150g thick steak slices
Butter
Oil salt pepper
Cocotte potatoes
600g potatoes turned cocotte shape

80ml oil
15g butter
Salt pepper

Artichoke cream
4 artichoek bottoms
Cooked in a blanc
1 liter water
Juice of 1 lemon
2 tbsp flour
Salt
Cream butter salt pepper

Chablis sauce
20g butter
80g carrots cut into brunoise
80g celery cut into brunoise
80g cultivated mushrooms cut into brunoise
120ml Chablis wine
250ml veal stock
1/2 bunch flat-leaf parsley
Salt peppr
甜點
Jubilee cherries sautems wine and grapefruit sorbet

400g cherries
50g butter
50g redcurrant jelly
50g sugar
1 tbsp Kirsch

Sorbet
500ml sautemes wine
250 ml water
150g sugar
1 grapefruit
Juice of 11/4lemon

有空 也請朋友到家吃吃飯吧
