Culinary Foundation Course I & II Enderun’s Culinary Foundation Courses are an introduction to the culinary world. Participants learn about fundamental skills necessary to become a successful recreational or professional chef. Whether your aim is to engage the culinary world professionally or as a serious enthusiast, these courses will enhance your knowledge and practical skills in cooking. Culinary Foundation Course III Culinary Foundation Course III builds on the first and second courses by focusing on following sets of menus. The five-day course will feature appetizers, soups, and main course, including garnishes, starches, and accompanying vegetables with plate presentations. The program will highlight dishes and menu combinations that can easily be prepared for entertaining guests as well as for special occasions. Pastry and Baking I & II Enderun’s Pastry and Bakery Courses are two series of workshops devoted purely to this highly specialized area of culinary arts. Through the guidance of Enderun’s expert pastry chef instructors, who will both direct and encourage them, participants will be introduced to pastry and baking fundamentals, from cooking principles, ingredients, proper use of equipment, to techniques in preparation and baking of real recipes. | FOOD LOVERS Demo and Dine Chef Marc Chalopin, Executive Chef of ADF+Enderun, orchestrates an exciting cooking demonstration. Hear him speak about Alain Ducasse Formation and its culinary philosophy. The Tastes of Thailand: Siamese Cuisine Spice, spice, and more spice are what more or less describe the exotic flavors of Thai cuisine, with all its curry, chili, or coconut milk merging into dishes that are both rich in flavor and vibrant in color. Chef Sau del Rosario shows you the distinct tastes that characterize the cuisine of this Southeast Asian neighbor. Sonja’s Cupcakes There is as much happiness to be obtained from eating those little cupcakes as from making them from scratch. From making and baking the batter to preparing and piping the frosting, let Chef Sonja Ocampo teach how to make the cupcakes that made her famous. Advanced Food Styling and Photography The course looks at modern and up-to-date food presentation techniques, from choosing the best plates for a specific dish, choosing unique presentation methods and preparation, and application of flavored oils and powders as well as other garnishes. It also includes hints and tips to ensure the prepared dishes are visually appealing and create a stunning and tasteful experience, which entices the guest right from the start. |
