Carsebridge 25yo 1979/2005 (56.4%, Duncan Taylor, Peerless, cask #32901, 154 bottles)

香草、奶油,細而穩的酒精。口感上雪莉影響顯著,口感佳,甜轉苦,尾出現穀物香。終感長,Spicy和酒精感,佳。香氣和口感展現出不同風格,但均有水準以上的表現,波本頭雪莉身的佳作。呼吸後有甘草香,口感風格變化以甘草香為主,奶油和Spicy仍存,風格嚴肅的上顎殺手。評價:89

Carsebridge是個讓蠻多人驚訝的酒廠,手中還有一隻Carsebridge 33yo Kingsbury,未來有機會辦Single Grain的活動時再來試試,找了一些Carsebridge的資料:
Carsebridge distillery, closed in 1983, was a traditional malt distillery with its own maltings when built in 1799 by John Bald. Fifty years later the distillery was turned into a raw grain distillery, at a time when blended whisky became very popular and demand for grain whisky was high. The pure water used at the distillery came from the Gartmorn Dam, a reservoir close to the distillery. Around 150 men used to work at the distillery, employing traditional methods across the entire production process, from the preparation of the grain in the kiln to the still houses with their elegant Coffey ’ s patent Stills.

A truly exceptional whisky from a unique cask slowly matured and reduced naturally over the years at the distillery until 1997 when the cask was transferred to our Edinburgh warehouse.

Tasting Notes:
Nose: Rich. Rum soaked Christmas cake, raisins, marzipan and dates.
Palate: Light, smooth. Medium sweet, oily with nutty, tabacco leaf and chocolate aroma.
Finish: Long, refreshing, toasted, treacle and subtle sweetness.
