Sourdough Cinnamon Buns酸麵團之脆脆小肉桂捲

Sourdough Starter (make 2 cups)

1T dry yeast
2cups warm water
3Ts sugar
1t salt
2cups all purpose flour

Dissolve yeast in warm water, stir in sugar and salt, beat in flour by hand. Transfer to a large container for 3 days in room temp. stir down each day.


1 1/2 cups all-p flour
1T sugar
2t BP
1/2t BS
1 1/2 cups Sourdough Starter (I use only 1 cup cuz ran out-.-)
1/2 cup oil

1/3 cup butter
3/4 cup brown sugar
1 1/2 t cinnamon


Stir flour, sugar, BP, BS and 1/2t cinnamon, pour in Sourgoudh Starter and oil, Mix until combined

Turn out onto well floured suface, keand lightly and roll into 30*23 cm . Spread cinnamon sugar, roll up form wide side. cut into slices.(the book says 2.5cm ) 12 yields.

400f 200c bake for 18-20 mins until sugar is bubbling.
