買不到就自己做!這是在美國定居懷念家鄉味的對策,歷經網路四處搜尋後,我終於發現某位居住美國東岸的家庭主婦,自己捲起衣袖製作「大腸包小腸」,最終她的文字與圖片也打動我,決定親身下廚挑戰,結果令人滿意,我想真的不必去外面買,自己烹煮便宜又好吃。
首先,把超市購入的糯米要先浸水兩小時
Sink sticky rice into water for 2 hrs.
熱油鍋炒香油蔥、乾蒜頭
Heat the pan and fried brown onion
爆香後把糯米加入拌勻,加一些黑胡椒、醬油和鹽調味
At mean time, add sticky rice,pepper and salt and stir well.
中途可加一點水拌炒,但不要炒得太熟太黏,以免待會不好灌米腸。
You may add some water to fried, remember don’t make it too over cook or too sticky,it could be more difficult when you try to fill rice into the sausage casing.
炒好後放涼備用,我是用電風扇直接吹。
Once sticky rice is ready,just put away and let it cooling down.
準備棉線進行綑綁。
Prepare some thread for fill the sausage.
剪成像一段一段備用。
You have to cut thread for same size to tight up the sausage while filling.
我是在大華超市99 Ranch買灌香腸的腸衣,英文叫Sausage Casings,像這樣一盒用鹽醃著,長度絕對夠且不到五塊錢美金。
You may purchase sausage casing in super market.A box of sausage casing is about 45 foot long,it costs less 3 bucks.
泡水把鹽分洗掉,也會因為泡水脹大一些好用,用不完的腸衣,可以再加鹽醃起來冷凍。
Sink sausage casing into water to get rid of salt.also water will makes casing size bigger,for those remain you can storage to Freeze.
還要準備灌的工具,你可從一加侖牛奶瓶的手把附近裁下來,這個口徑比較小,可用來灌小腸衣,我選擇用礦泉水瓶填裝。
You have to prepare a tool for filling,nomarly cut a piece of plastic milk box .
像這樣將腸衣套在管口,把腸衣上擠到瓶口上方,然後將炒好的糯米往洞口擠進去, 可以用筷子幫忙推入。
As picture shown,you may tight up the casing around the tool.Also dip some cooking oil around the tube.It makes your filling job easier,then fill sticky rice into the casing.
兩端可用棉線綁,然後在蒸的時候會急速收縮,所以最好預留空間在蒸籠內縮起來,糯米會變得太紮實,口感不好。
Once you are ready to cook sticky rice along with casing,you have to use thread to tight up both end.Remeber ,boiled water cause casing shrink.You got to tight up both end before you drop those sticky rice sausage into boiled water.
蒸半小時就差不多了。
Medium heat to cook those sausage for a half hour.
然後把帶油的香腸與米腸一起煎焦,切對半就位。
Grill small sausage to well done.

糯米腸也可用烤箱再烤一下切開,放入一些花生粉、香腸、酸菜,最後淋上醬汁。You may use bake oven to heat up sticky rice sausage.Once it is ready,cut it in half,add some peanut powder,pickle and spicy sauce upon your own preference.
我自己有將食譜稍微修改作法,這是目前的心得,下次我可能還會修改,因為這次烹煮發現米腸變小、變紮實,整道菜變成「大腸變小腸」。文中我特別準備英文版本翻譯,各位也可將食譜分享給外國朋友。
