Recipe - Chilli Crab

Chilli Crab
Compliments of Blue Lobster Seafood Restaurant

Local Spices:
For blending
1kg onion
140gm garlic
200gm ginger
160gm lemongrass

Ingredients

250gm local spices
100gm grind fresh chilli
2nos whole beaten eggs
½ teaspoon sesame oil
0.25ml Hua Teow Chew (chinese wine)
200gm chilli tomato sauce
300ml chicken stock
300ml cornflour
salt & pepper to taste

Method of Preparation:
Heat up oil in the hot wok
Stir fry the local spices and chilli
Add in Chinese wine, chilli sauce and stir in the crab for 1 minute
Add in chicken stock and cover for 4-5 minutes
Lastly thicken with the cornflour and stir. Spread in the beaten egg, sesame oil and salt and pepper to taste.
